Ingredients

  • 1 package of chicken drumsticks (thawed)                      

  • 1 green bell pepper, chopped

  • 2 cans (15 oz each) kidney beans, drained and rinsed    

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (28 oz) crushed tomatoes                                           

  • 2 tablespoons tomato paste

  • 2-3 tablespoons Sweet & Smoky Chili Mix                       

  • Salt and pepper to taste (optional)

  • Optional toppings: shredded cheese, sour cream, chopped green onions, jalapeñosPrepare the Crock Pot: Place the chicken drumsticks directly in the crock pot.

  • Add Vegetables and Beans: Add the chopped green bell pepper, kidney beans, black beans, crushed tomatoes, and tomato paste to the crock pot.

  • Add Seasoning: Sprinkle the Sweet & Smoky Chili Mix over the ingredients and stir to combine, ensuring the drumsticks are coated.

Preparation

Step 1


Prepare the Crock Pot: Place the chicken drumsticks directly in the crock pot. Add Vegetables and Beans: Add the chopped green bell pepper, kidney beans, black beans, crushed tomatoes, and tomato paste to the crock pot. Add Seasoning: Sprinkle the Sweet & Smoky Chili Mix over the ingredients and stir to combine, ensuring the drumsticks are coated.



Step 2


Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be cooked through and tender.



Step 3


Shred the Chicken (Optional): For easier serving, you can remove the drumsticks, shred the meat from the bones, and return the shredded chicken to the chili.

Taste and Adjust: Before serving, taste the chili and adjust the seasoning if needed, adding salt and pepper as desired. Serve: Ladle the chili into bowls and top with your favorite toppings. Enjoy with cornbread or crackers!
